Flavour Forecast: A taste of innovation with McCormick Foods Australia

In May, a group of enthusiastic Home Economics teachers and university students in Victoria had the unique opportunity to go behind the scenes at McCormick Foods Australia. Hosted by HEIA(V) at McCormick’s state-of-the-art Technical Innovation Centre, the twilight visit offered a fascinating insight into the world of flavour, food science, and trend forecasting.

Michelle Zammitt from McCormick Foods Australia kicked off the session in the cookery demonstration area, showcasing McCormick’s latest range of herbs and spices alongside appetite-whetting visuals tied to this year’s Flavour Forecast recipe challenge. The visit continued through the test kitchen, consumer sensory analysis lab, and research and development (R&D) spaces, giving participants a true insight into how flavour trends are developed from concept to consumer.

Michelle also gave an overview of how McCormick identifies and develops global flavour trends, which sparked lively discussion and highlighted clear connections to food studies, design thinking, and the curriculum in Victoria. The session was marked by conviviality, collaboration, and a strong sense of connection between industry and education.
